When I reach a certain level of stress [home school is stressful, ya'll] I want carbs. Bad carbs, mostly pasta if I were to be specific. Some people are good at moderating themselves when it comes to pasta but I am not one of those people, and lucky for me, my body is super sensitive to carbohydrates. Just one carb heavy meal can make me to gain two pounds. No joke. I've come up with something that works for me. I call it "Keep-Me-From-Eating-A-Pound-of-Pasta-Pesto-Egg-Salad." It's super simple, it's just three hard boiled egg whites, two hard boiled egg yolks, and some homemade pesto. I don't use a recipe for pesto, as I prefer to wing it in the kitchen, but if you Google it you'll find a million. I swear that when I eat this my brain thinks it's pasta and my body really prefers the protein. Oh, and a couple of my kids will eat this too.

Personal | Eat. Pray. RUN.
I knew that virtual school would be an enormous commitment on my part. I know myself and my tendency to give so much of myself that I get lost along the way. Don't most of us mothers do that? I was as guilty as anyone in the early years of motherhood, but in the last few, I have regained my sense of self. I have many interests I have pursued outside of motherhood and I am a better mother for it. So one of my first thoughts upon hearing that this commitment would entail me giving up 5-6 hours of my day to educate my children was, Ok Cameron, what are you going to do for you? I pondered this for about a week, when I came up with Eat. Pray. RUN. I felt that if I could simply focus on these three small things I would make it through this year intact. EAT will be my way of combating the fact that I will be sitting on my hind end most of the day. It simply stands to remind me to be conscious of what I place in my mouth. PRAY is there to remind me to read my bible and pray daily. I imagine the prayers will sound something like this, "Lord, please help me make it through just one more day. Give me wisdom to teach and the patience to not hurt someone today. Amen." I kid, I kid. Personally, I tend to spend time with God first thing in the morning alongside my coffee and my breakfast. The kids also do devotions at the table during breakfast, they take turns each day reading from this.
RUN is my challenge and my sanity saver. If you haven't ever ran, you probably don't understand how effective a stress reliever it is. The goal is to do a competitive race by the end of the school year. A symbol of sorts that I made it through a school year and I managed to improve myself in the process. Currently, I can run a 5k pretty easily. I haven't set a distance goal but rather I'm kind of just seeing where my running can take me this year.I plan on updating you all on how the Eat. Pray. RUN plan is going. Accountability is awesome.
